He is right. I am deep into the business now. And up to my eyeballs in people. That’s people with a capital P. That’s what I keep coming around to, bumping into, knocking up against — people. Like an explorer with short-term memory loss, I keep rediscovering, again and again, that the future of the restaurant rests upon the shoulders and psyches of the people who work here. Not on the fish. Not on sweet potatoes. Not design, not prices, wine, music, menu, advertising, economy or weather. Those have all been mapped out, more or less. People, however, are anything but fixed. Or fixable. People get sick. People fall in love. People get new jobs, new lusts, new addictions. People get hurt feelings. People get big eyes, or big heads, or big ideas. People get religion. People lose their religion. People move on. God bless.
